SoSalt uses the salt extraction technique, adopted in the Trapani saltworks, is based on the spontaneous evaporation of sea water.
Hand-Harvested: Harvesting by hand is done according to the traditional system that has been handed down for generations.
The salt workers enter the crystallization tanks and begin to break the crust with the help of crushing poles. Once this manual crushing is finished, the salt workers, using a special iron shovel, proceed to shape small piles of salt, making the tanks look like a "chessboard".
Subsequently, the salt is transported by wheelbarrows to the banks of the salt pans, creating ever larger prism-shaped heaps. Once the first harvest is completed, preparations are made for the next one in mid-August and, weather conditions permitting, for the third harvest at the end of September.
